Guacamole

To make good guacamole you have to start with good, ripe avocados. Remove the avocados from their skin and place in a bowl.  Mash the avocado with a potato masher or fork. Add finely-chopped onion, tomato, and cilantro.  Add lemon juice and salt to taste.  Eat guacamole with Dos Loquitas corn tortilla chips, or include it in any Mexican (or non-Mexican) dish as an accompaniment.
